I started playing Sakuna: Of Rice and Ruin last week, and probably have about 12 hours in it. It's surprisingly deep in the rice-growing half of the game, to the point that I'd call it a simulation. The combat is fun, but the primary difficulty comes from level disparity and anything that's higher than you becomes an unkillable bullet sponge. The answer to difficulty quickly becomes waiting until next year (harvesting the rice levels you up) rather than getting better at the mechanics. Overall, I do like the game and will continue playing it.

Catan: Cities and Knights. I've played Catan a million times, but never this particular expansion. It's like an entirely different game, really - so many changes that it doesn't feel the same at all. It's a little overwhelming and feels much, much more complex than standard Catan at first, but the mechanics all work together smoothly once you figure it out. I like it a lot, and am having fun exploring it with my friend!
