just as a PSA, if you're thinking 'a smoothie with a not quite ripe banana will still be ok', you need to go to the nearest mirror and say to yourself 'no, no it will not be ok'

Bananas should NOT be crunchy - this is an abomination of the very nature of bananas. Doesn't matter what shape they are either. Fully endorse OP.

if anything it made it worse because it became 'drinkable' instead of 'get down the sink you abomination'

For me personally that would’ve been hard to drink down. The banana has to have a certain level of ripeness for me. Under and over ripeness is a no no for me
