I much prefer the overall structure of this draft than the final product. It sounds like it flows better as a follow up to WandaVision than having her go all in on 'muh boys' between the show and movie.
I don't like the idea of Wong being the surprise death as I really enjoy the character, although it is comics so they could have had Strange buddy up with an alternate universe Wong down the road.
I don't understand what her accidentally decapitating Wong brings to the story. Manufactured drama? It sounds like if she just peaced out into an alternate reality at the end to be with her kids then that would have been a decent ending. She could have been the hero she deserved to be and then had a bitter-sweet ending of leaving her friends to find happiness elsewhere. And Wong would still be around.
I'm guessing the follow up would be that her overreaction leads to the dark side or something like that. Definitely not worth killing Wong, as your example would make more sense.
