This is a simple, but tasty scallop dish that I made up on my last trip to Nova Scotia:

Ingredients

  • fresh shucked scallops
  • salt
  • pepper
  • butter
  • lemon juice
  • Corberrie’s apple cider

Step-by-Step Instructions

  • Rinse scallops with fresh water.
  • Place scallops on a plate, and lightly season with salt and pepper.
  • Melt a tablespoon or two of butter in a skillet, over a medium heat.
  • Place scallops in the skillet, sautéing until scallops are golden brown on each side.
  • Return scallops to the plate.
  • Reduce heat of the burner to medium low.
  • In the skillet, add a smidge more butter, if needed, along with the juice of half a lemon, and a tablespoon or two of Corberrie’s apple cider. Simmer until reduced.
  • Off the heat, mix the scallops in the reduced goodness in the skillet.

Enjoy!

I am currently not in the mood to cook, especially anything hot. We are getting tired of sandwiches.

So what are your favorite hot weather recipes.

Looking for an easy fast meal that uses some store bought ingredients, this one is for you. This can also be made from scratch but takes more work.

1 jar pesto (I use Costco pesto so if using that it's 1/4-1/2 jar)

1 jar alfredo, any flavor, I use a garlic one

1 bag frozen grilled chicken strips

1 pound linguine or pasta of your choice

Salt for pasta water

Fresh grated parmesan cheese

Start water for pasta.

In a sauce pan add the pesto, alfredo and chicken. Stir and cover, cook on medium low, stirring occasionally.

Cook and drain pasta. Toss with the sauce. Pepper and parmesan cheese to taste. Serve with garlic bread and salad.
